Watermelon, Feta, and Pickled Onion Salad

• 1/4 large watermelon
• Approximately 70g lamb’s lettuce (mâche)
• 1/3 cup olive oil
• 1 teaspoon honey
• 80g feta cheese
Pickled silver onions OLE! (amount to taste)
• 1 tablespoon thick balsamic vinegar (preferably raspberry or cranberry)

Cut the watermelon into pieces and remove the seeds. Arrange the lamb’s lettuce, watermelon, crumbled feta, and pickled onions on a plate. Dress with olive oil mixed with honey, a bit of salt, and pepper. Drizzle with balsamic vinegar. Serve cold.
