Waffles with olives

– 1/2 cup grated hard goat cheese
– 300 g of wheat flour
– 350 ml of milk
– 1/2 jar of green olives with with Pepper Paste OLE!
– 2 eggs (yolks and whites separately)
– 1 teaspoon of baking powder
– 4 tablespoons of vegetable oil
– 1/2 teaspoon salt and freshly ground pepper

Separate the whites from the yolks. Beat the egg whites with a pinch of salt until stiff. Place the remaining ingredients (except the olives and grated cheese) for the dough in a second bowl and mix until smooth. Then add egg whites, olives, cheese to the mass and mix gently. Pour the batter into the waffle iron and bake for about 5 minutes until golden. Serve with your favorite salad. The dish goes well with arugula with goat cheese and olive oil with a bit of honey and mustard.
