Vegetarian hot dogs with carrots and pickled onions golden OLE!

– 3 medium-sized baguettes
– 6 pickled cucumbers/gherkins
– ketchup
– mustard
– vegan mayonnaise (optional)
golden marinated onion OLE!
– roasted onion (recipe for homemade below)

Carrot Sausages:
– 6 medium carrots
– carrot marinade: 3 tablespoons of olive oil, 2 tablespoons of soy sauce, 2 tablespoons of vinegar, ½ teaspoon of salt, 1 teaspoon of sweetener (e.g. maple syrup), pepper
– 1 tablespoon of smoked or regular salt

Additionally optional:
Homemade fried onion:
– 1 onion
– 2 tablespoons of flour
– 3 tablespoons of oil

Homemade fried onion:
Cut the onion into cubes, sprinkle with 1 tablespoon of flour and coat it thoroughly. Drop into hot oil and cook over medium heat, stirring constantly. Sprinkle the second tablespoon of flour and fry until the whole is nicely browned. Leave aside.

Wash, peel and cook the carrots until soft with 1 tablespoon of salt. When cooked, combine with the marinade for at least 1 hour – the longer the better. Grill them until they are golden in color and look like sausages.
Warm the buns and cut them in half – spread one half with ketchup, the other with mustard and/or mayonnaise. Place the hot carrot, cucumber slices and marinated onion halves inside the bun. Sprinkle with fried onion. It tastes best when warm.
