– 2 tablespoons of butter
– 2 cloves of garlic
– 3 eggs
– 1 wheat tortilla
– a handful of spinach
– cherry tomatoes
– a pinch of chili flakes (optional)
– 2 tbsp grated Parmesan cheese
– dried tomatoes with pumpkin seeds OLE!
Crack the eggs into a bowl. Add a pinch of salt, pepper and grated parmesan. Mix everything with a whisk or fork.
Melt the butter in the pan. Add chopped garlic along with chili flakes. Add spinach. Cook for a while and add chopped sun-dried tomatoes with pumpkin seeds. Pour in the egg mixture. Arrange a few cherry tomatoes and place a tortilla on top. Leave on medium heat until the eggs are set. Turn to the other side and wait until brown.
