Tomato Carpaccio with silver onions in vinegar
Ingredients
- Large tomatoes
- basil pesto
- Extra virgin olive oil
- Salt and black pepper

- Parmesan cheese
- Fresh basil leaves
Method
- Slice the tomatoes into very thin rounds.
- Drizzle a little olive oil onto a large serving plate and spread the basil pesto evenly over the surface.
- Arrange the tomato slices on top.
- Season with black pepper and a pinch of salt, if desired.
- Cut the pickled pearl onions into smaller pieces or leave them whole, depending on your preference, and scatter them over the tomatoes.
- Add the fresh basil leaves.
- Finish with a generous sprinkling of grated or shaved Parmesan cheese.
Serve immediately and enjoy!
