Tomato Carpaccio with silver onions in vinegar

  1. Slice the tomatoes into very thin rounds.
  2. Drizzle a little olive oil onto a large serving plate and spread the basil pesto evenly over the surface.
  3. Arrange the tomato slices on top.
  4. Season with black pepper and a pinch of salt, if desired.
  5. Cut the pickled pearl onions into smaller pieces or leave them whole, depending on your preference, and scatter them over the tomatoes.
  6. Add the fresh basil leaves.
  7. Finish with a generous sprinkling of grated or shaved Parmesan cheese.
