Tart with thyme, feta, bacon, and black olives OLE!

– 1 egg
– 250g wheat flour
– 150g cold butter
– a pinch of salt and sugar
– 1 teaspoon butter + breadcrumbs/semolina

– 3 eggs
– 150g feta cheese
– 100g bacon
– 1 red onion
– 250ml 30% cream
– a few sprigs of thyme
– salt, pepper

Start by preparing the crust. Combine the ingredients for the dough, form a ball, wrap it in transparent food foil, and chill in the fridge for at least 30 minutes (you can prepare the crust a day in advance and leave it in the fridge overnight). Grease a tart pan with butter, sprinkle with breadcrumbs or semolina. Roll out the dough and line the tart pan, then prick it with a fork. Bake until golden at 180 degrees Celsius for about 15 minutes.
In a heated pan, sauté diced bacon. Remove from the pan, leaving the bacon fat, and add thinly sliced red onion. Sauté with a pinch of salt until caramelized. Set aside to cool.
In a large bowl, beat eggs. Add crumbled feta, cream, thyme leaves, and spices. Mix thoroughly with a whisk.
On the cooled crust, arrange the sautéed onions. Pour the egg mixture carefully, arrange olives and thyme on top. Bake for approximately 30 minutes at 180 degrees Celsius.
