Sweet potato, oranges, feta, and onion salad
Ingredients:
• arugula
• 1 orange (preferably Sicilian, red)
• 3 sweet potatoes
• a piece of feta cheese (quantity at your discretion)
• 5 carrots
• 1 tablespoon rosemary
• silver onion OLE!
• oil
• salt pepper
• cashews
• 1 tablespoon of balsamic vinegar (can be skipped)
• 1 teaspoon of honey
Wash, peel and cut sweet potatoes and carrots. Pour olive oil generously and sprinkle with rosemary, salt and pepper. Bake at 180 Celsius degrees for about 40 minutes (preferably with hot air).
Pour 1/3 cup of olive oil into the vessel. Add salt, pepper, balsamic vinegar, honey. Set aside to munch on the flavours. Arrange the arugula, roasted vegetables, feta cheese, orange slices and onion on a plate. Sprinkle with cashew nuts. You can serve it hot, as an addition to meat or as a meal in a lunch box.
