Sweet Hasselback potatoes with creamy mushroom sauce

Ingredients:
• 4 sweet potatoes
• Fresh pomegranate seeds
• Olive oil
• Spices: salt, pepper, Herbes de Provence, chili flakes, rosemary
• Several sprigs of fresh thyme
Marinated mushrooms with carrots and onions OLE!
• Sauce:
• 1 clove of garlic, minced
• 1 package of 12% sour cream
• Salt, pepper
• Additionally, Ajvar or other favorite paste

Slice the sweet potatoes about halfway through into thin slices resembling a fan. Place them in a baking dish. Generously sprinkle with herbs and salt. Drizzle with olive oil and bake for about 40-50 minutes, occasionally basting with the resulting sauce. The potatoes should be crispy on the outside and soft on the inside. Combine the sauce ingredients together.
On a plate, ladle the sauce, pomegranate seeds, mushrooms, and sweet potatoes. Serve warm with Ajvar or your favorite sauce.
