Spinach dumplings with dried tomatoes

Ingredients for the noodles:
– 200g of spinach
– 200 g flour (plus extra for dusting)
– salt

– 1-2 tablespoons of butter
– 2 tablespoons pesto
– 1/3 jar of dried tomatoes with pumpkin seeds OLE!
– salt

In a chopper (blender with a container) mix the spinach with flour and a pinch of salt. The dough must come easily from the walls and form a ball – don’t worry if the dough sticks to your hands a little. Sprinkle the table generously with flour and form a roll. Using a sharp knife, cut the dumplings or form balls and use a fork to make the gnocchi. Boil in salted water until the dumplings float to the surface (about 2 minutes). Salt if necessary. Add pesto, butter and chopped tomatoes with seeds. Serve warm.
