Solyanka soup with Olives Green Sliced OLE!

– about 250g oyster mushrooms
– 90g of smoked tofu
– 3-4 pickled cucumbers
– 2 teaspoons smoked paprika
– 2 tablespoons tomato paste
– about 750ml vegetable broth
– 1-2 teaspoons cooking oil

To serve:
Olives Green Sliced OLE!
– 1 tablespoon sour cream
– Fresh parsley and dill
– Slice of lemon

In a large pot, on cooking oil add sliced oyster mushrooms. Cook them until browned. Add cubed, smoked tofu.
When ingredients are lightly browned, add pickled cucumbers (cubed or grated) and smoked paprika.
Stir, add tomato paste. Add vegetable broth and simmer under cover for about 10 minutes.
Serve the soup in deep plate, topped with Green Sliced Olives OLE!, tablespoon sour cream, chopped dill and parsley and slice of lemon.
