Shakshuka with spinach and mushrooms
– 1,5 packs of spinach
– 1 shallot
– 2 cloves of garlic
– 1 chili pepper
– creamy goat cheese roulade
– cherry tomatoes
– eggs (approx. 3)
– soy sauce
– marinated mushrooms with carrots and onion OLE!
– baguette or dark bread to serve
– roasted sunflower seeds
– oil and butter
Melt the butter and olive oil in a frying pan. Add chopped garlic cloves, chopped shallots, mushrooms and chili. Add the spinach and cook until it reduces in volume.
Season with soy sauce and pepper. Add ½ of cheese. Mix thoroughly. Make cavities for the eggs and crack an egg in each. At this stage, you can use the lid, thanks to which you will shorten the cooking time to about 4-5 minutes, until the whites are set according to your preferences. Sprinkle the dish with sunflower seeds. Add a few more mushrooms. Serve it with warm bread.
