Salad with Vegetarian “Chicken” and Yogurt Sauce

Ingredients:
– 1 head of romaine lettuce
– 2 handfuls of arugula
– 1 pack of veggie “chicken”
– oil
– 1 red onion
– 1-2 cucumbers
– cherry tomatoes
Silver pickled onions OLE!
– grated Parmesan cheese (1/3 cup)

Sauce:
– ½ cup yogurt
– 1 teaspoon mustard
– 4 tablespoons olive oil
– 2 garlic cloves
– 1 teaspoon mayonnaise (optional)
– salt, pepper
– 1 teaspoon honey
– ½ teaspoon chili flakes

Combine sauce ingredients and refrigerate. Fry “chicken” in a pan or grill. Peel and dice cucumbers. Slice onions. Divide lettuce into pieces, mix with arugula, veggies, and onions. Before serving, top with warm “chicken,” drizzle with sauce, and sprinkle with cheese.
