Quick Veggie Gyros with Onions

Ingredients:

  • Pita bread or tortillas
  • 1 pack (150 g) plant-based gyros
  • Romaine lettuce
  • 1 red onion
  • Cherry tomatoes
  • ½ block of feta cheese
  • Pickled silver onions OLE!
    Sauce:
  • ½ cup Greek yogurt (soy or natural)
  • ½ tsp curry powder and paprika
  • 1 clove of garlic
  • Salt, pepper
  • Chili flakes

Mix all sauce ingredients and set aside. Grill the bread. Fry the gyros in a pan. Slice the onion into thin strips, dice the feta, and halve the cherry tomatoes. Assemble by layering the bread with sauce, lettuce/arugula, vegetables, gyros, and cheese. Top with pickled onions and drizzle with more sauce.
