Potato Pizza with Dried Tomatoes, Black Olives, and Capers

Ingredients:
– 1kg potatoes
– 2 onions (red or white)
– 100g ham
– 150g grated yellow cheese
– breadcrumbs
– olive oil
– salt
– pepper
– 1 tablespoon Herbes de Provence

Wash the potatoes (do not peel) and cook them in salted water. Grease a baking dish with olive oil and sprinkle with 1 tablespoon of breadcrumbs. Arrange the cooked potatoes on the bottom of the dish and crush them using the bottom of a glass. Place parchment paper on top and press down with your hands to create an even crust. Remove the paper. Season with salt, pepper, and herbs. Bake at 220 degrees Celsius for about 20-30 minutes until the potatoes are golden brown.

Meanwhile, on a tablespoon of oil, sauté the sliced onions until golden. Season with salt and pepper. Cut the ham into small pieces and spread it with the onions on the pre-baked pizza base. Place pieces of Dried tomatoes with black olives and capers in oil Ole! generously on top, then sprinkle with cheese. Bake for 10 minutes at 200 degrees. Serve hot.
