Pear and Pickled Onion Salad

Ingredients (very simple):

  • Arugula or mixed salad greens
  • 2 pears
  • Golden onions in vinegar OLE!
  • A handful of walnuts or a nut mix (optional)
  • Feta or goat cheese (according to preference)

Dressing (30 seconds):

  • 2 tbsp olive oil
  • 1 tsp honey
  • 1 tsp mustard
  • Pepper

Instructions:

  1. Place the arugula or mixed greens in a large bowl.
  2. Dice the pears.
  3. Add the pickled onions, either whole or halved.
  4. Crumble the cheese and add the nuts.
  5. Drizzle with the dressing and gently toss.

Taste: Sweet and tangy, slightly creamy from the cheese, with a crunchy nutty texture — very “restaurant-style.”
