Panko cutlets with bruschetta on millet
- 500g of minced meat (in this recipe: pork shoulder)
- 1 egg
- 2 tablespoons of breadcrumbs
- 1 clove of garlic
- handful of basil
- 3 tablespoons bruschetta tomatoes + herbs OLE! (+ some to be served on plates)
- salt & pepper
- Panko breadcrumbs for breading (we can replace with ordinary breadcrumbs)
- millet (about 100g)
- 1 onion
- cooking oil/butter
Rinse the millet and cook according to instructions on the packaging. Meanwhile, cook the chopped onion on oil or butter which will be adding to the millet later.
Place meat in a bowl with egg, squeezed garlic, chopped basil, breadcrumbs and spices. Form cutlets with wet hands, coat them generously in panko and fry on hot oil.
Season the millet with onions to taste and put them on a plate. Put a cutlet on top with a bit of bruschetta for the taste.
