- In a small bowl, mix olive oil with honey and garlic.
- In a separate bowl, mix olive oil with paprika powder.
- Make deep cuts in the potatoes, being careful not to slice all the way through.
- Brush the potatoes on all sides with the olive oil and paprika mixture.
- Place the potatoes in the air fryer and bake at 180°C for about 30 minutes.
- About 5 minutes before the end of baking, brush the potatoes again with the olive oil, honey, and garlic mixture.
- While the potatoes are baking, chop the sun-dried tomatoes.
- Add the sun-dried tomatoes to the baked potatoes.
- Finish by sprinkling everything with chopped chives.
