Hasselback Potatoes with Sun-Dried Tomatoes

Preparation:

  1. In a small bowl, mix olive oil with honey and garlic.
  2. In a separate bowl, mix olive oil with paprika powder.
  3. Make deep cuts in the potatoes, being careful not to slice all the way through.
  4. Brush the potatoes on all sides with the olive oil and paprika mixture.
  5. Place the potatoes in the air fryer and bake at 180°C for about 30 minutes.
  6. About 5 minutes before the end of baking, brush the potatoes again with the olive oil, honey, and garlic mixture.
  7. While the potatoes are baking, chop the sun-dried tomatoes.
  8. Add the sun-dried tomatoes to the baked potatoes.
  9. Finish by sprinkling everything with chopped chives.
