Grilled Tuna Protein Pancakes

Ingredients:

• 2 small cans of tuna chunks
• 2 eggs
• 1 shallot
• 3 carrots grated finely
• 2 heaped tablespoons of flour
• 2 cloves of garlic (1 clove for pancakes + 1 clove for dip)
Sliced Black Olives OLE!
• salt, pepper

* These pancakes work best on an electric grill or toaster.

Mix all ingredients in a large bowl. Preheat the grill and place parchment paper on it.
Using a spoon, place the pancake batter on the grill, maintaining some distance between each. Bake for about 5-10 minutes until the pancakes are golden brown with visible stripes.
Serve warm or cold with creamy cheese mixed with spices and a clove of garlic.
