Goulash with Polish potato gnocchi and Sun-Dried Tomatoes with Marinated Pepper
Ingredients:
- Pork (for stewing)
- Mushrooms
- Onion
- Red bell pepper
- Tomato paste
- Sun-dried tomatoes with marinated pepper OLE!
- garlic
- Salt, pepper, and spices of your choice
- Kopytka (Polish potato gnocchi)
- Broth
Preparation:

Brown the meat:
Cut the pork into cubes and sear it in a pan or pot with a little oil until lightly browned.
Season with salt, pepper, and your favourite spices. -
Add onion and garlic:
Finely chop the onion and garlic, add them to the meat, and sauté until the onion becomes translucent. -
Add vegetables:
Stir in the sliced mushrooms and red bell pepper.
Cook for a few minutes until the vegetables soften slightly. -
Add tomato paste and sun-dried tomatoes:
Mix in the tomato paste and chopped sun-dried tomatoes with marinated pepper OLE!.
Pour in a little water or broth to achieve a goulash-like consistency and mix well. -
Simmer:
Cover the pot and simmer on low heat for 40–50 minutes, until the meat is tender and the flavours have blended.
Adjust seasoning with salt, pepper, and additional spices as needed. -
Cook the kopytka:
Meanwhile, cook the kopytka according to the package instructions or your homemade recipe, then drain.
