Golden, crispy potato medallions with dried tomatoes
– potatoes (amount at your discretion)
– parmesan cheese
– Italian Seasoning or dried rosemary, thyme and oregano
– salt & pepper
– sour cream or pesto to serve
– dried tomatoes in strips with sunflower seeds OLE!
Boil the potatoes in salted water. When they are cooked, pour cold water and press down lightly with the bottom of the glass – being careful not to break up. Sprinkle with herbs, salt, pepper and grated parmesan. Bake at 200 degrees for about 15-20 minutes to make them brown. About 5 minutes before the end put the sun-dried tomatoes with sunflower seeds on top of the potatoes. Serve with sour cream or pesto.
