Curry with sweet potato and chicken with garlic with herbs in oil OLE!
• 1 can of coconut milk
• 3 tablespoon of Tikka Masala paste
• 2 small shallots
• 3 cloves of garlic
• Garlic with herbs in oil OLE! (quantity at your discretion)
• 1 can of diced tomatoes or 300 ml of passata
• 2 sweet potatoes
• parsley / coriander for sprinkling
• Olive oil
Peel, wash and dice sweet potatoes. Heat the oil in a frying pan and fry the chopped garlic and ginger. Add tikka masala paste. Add diced sweet potatoes. Fry for a while and pour in passata / canned tomatoes. After some time, coconut milk. Season and set aside over low heat, covered. Keep on heat for about 30 minutes. Add Garlic with Herbs in Oil OLE!. Before serving, sprinkle with fresh coriander leaves and rice or pancakes.
