Cream of asparagus with pickled white garlic OLE!

– 1 bunch of asparagus
– 500 ml of vegetable broth
– onion or shallot
– 2 cloves of garlic
– cream 18%
– dried chili flakes
– 2-3 tablespoons of pickled white garlic OLE!
– 2 tablespoons of olive oil
– a handful of fresh basil
– salt & pepper

Wash the asparagus and break off the hard ends (try to “break” the asparagus in your hand and the end will come off by itself). Cut them into pieces of about 2 cm.
Chop the onion and garlic and fry in olive oil. Add asparagus and fry for a few more minutes. Take out a few pieces – heads for decoration. Pour the hot broth into the rest and cook for about 15 minutes. Blend the whole thing. Add sour cream and pickled white garlic OLE!
Season with salt, asparagus heads and chili flakes. Serve warm.
