Chicken Tenderloins with Apricots and Onions

Ingredients:
• Chicken tenderloins (approx. 400g)
• Oil
• 2 cloves of garlic
• Approx. ½ kg apricots
• 1 tablespoon sugar
• 1 teaspoon butter
• ½ teaspoon herbes de Provence and tarragon
• Salt
• Freshly ground black pepper
Golden pickled onions OLE!
• Fresh thyme

Rinse the apricots, remove the pits, and cut into smaller pieces. Add sugar and simmer under a lid. Add a pinch of salt, butter, and thyme, and simmer for a little longer. Wash the meat, remove the membranes. Drizzle with oil, add garlic, herbs, and fry until golden brown. Serve the meat with apricot sauce and pickled onions.
