Buckwheat with vegetables and sun-dried tomatoes
– 200g buckwheat groats (other groats can be used)
– ½ broccoli
– 1 onion
– 2 cloves of garlic
– cherry tomatoes
– ¾ jar of dried tomatoes with capers in oil with herbs OLE!
– feta cheese
– arugula (optional)
– chives (optional)
Boil the broccoli in salted water with a little bit of sugar (so that it does not lose its color) for about 5 minutes, until it is slightly cooked, but retains its elasticity.
Cook the buckwheat according to the recipe on the package.
Sauté the diced onion in oil or butter. Add chopped garlic. Sauté until the onion is browned and soft.
Add chopped sun-dried tomatoes with capers. Combine with cashews. Add cooked broccoli, arugula, cherry tomatoes, 1 or 2 tablespoons of tomato oil and feta cheese. Sprinkle everything with chives.
