Broccoli pancakes with Pastena – sun-dried tomato paste
– 1 smaller broccoli,
– 100g Pastena – dried tomato paste OLE!
– 2 eggs,
– 150g of flour
– 20g grated Parmesan cheese,
– 2 tablespoons of grape seed oil.
– Sour cream 18%
– Salt and pepper to taste
Put broccoli florets, egg yolks, Parmesan flour, 2 tablespoons Pastena – dried tomato paste OLE! into a blender. Blend it until smooth. In a separate bowl, beat the egg whites with a pinch of salt. Add the broccoli mass to the beaten egg whites, slowly stirring.
Preheat a frying pan and form about 6 cm diameter pancakes.
Serve the pancakes with cream and Pastena in a bowl. Optionally, add a few fresh mint leaves.
