Beetroot burgers with green pitted olives OLE!


  • 1 medium-sized beetroot
  • 1 cup of red lentils
  • 1 egg
  • 2 shallots
  • 2 cloves of garlic
  • 2 tablespoons of breadcrumbs (+ for sprinkling)
  • salt & pepper
  • 2 tablespoons of flour
  • ½ jar of Pitted Green Olives OLE! (plus to be served separately)


  • burger buns
  • vegan or regular mayonnaise
  • arugula or lettuce
  • pickled cucumbers (optional)
  • homemade ketchup (optional)
  • tomatoes

Cook the shallots in butter or oil until golden brown. Rinse the lentil in a strainer and boil in salted water (about 1.5 glasses) according to the instructions on the package. Cool it down. Grate the beets on a grater (on large or medium mesh). Add butter, cooked shallots, finely chopped olives and garlic cloves to the lentil. Season to taste and mix. Toss in breadcrumbs. Stir, coat and cook in a pan with oil. Spread the rolls with mayonnaise and ketchup. Add slices of cucumbers, tomatoes and the remaining whole olives. Serve it warm.
