Baked Sweet Potatoes with Guacamole, Feta and gold Onions


• 2 sweet potatoes (washed, unpeeled) sliced into 1-2cm thick rounds
• 2 ripe avocados
• 1 small red onion
• 10 cherry tomatoes
• 1/3 pack of feta cheese
Pickled Golden Onions OLE!
• 2 cloves of garlic
• 1 tablespoon freshly squeezed lemon juice
• salt, pepper
• 1 teaspoon cumin, sweet paprika, rosemary, dried chili flakes
• olive oil

Make guacamole by peeling and seeding the avocados, then mashing them with a fork. Add chopped onion, tomatoes, minced garlic, lemon juice, salt, and pepper. Refrigerate.
Arrange sliced sweet potatoes on a baking sheet lined with parchment paper. Drizzle with olive oil, sprinkle with spices, salt, and pepper. Bake for about 25 minutes at 180 degrees Celsius. Top each potato slice with a spoonful of guacamole, crumbled feta, and pickled golden onions.
