Baked potatoes with crispy ham and sun-dried tomatoes
• 8 large potatoes
• 3 tablespoons of butter
• 4 cloves of garlic
• about 80g of bacon cut into cubes
• 2 tablespoons of chopped fresh basil, parsley and chives
• thyme for decoration
• Dried tomatoes in strips in oil with herbs OLE!
Wash and dry the potatoes. Wrap separately each potatoe in aluminum foil. Bake until soft. You can also cook them in advance for about 8 minutes.
When they are ready, hollow out some of the potatoes. Combine the potato mass with butter, herbs and spices.
Cook the bacon until golden brown. Serve the potatoes warm with cooked bacon, sauce and dried tomatoes in strips.
