Bagels with scrambled eggs and bacon (recipe for 1 serving)

• bagel
• 2-3 eggs
• 3- 4 slices of bacon
• arugula
• 1 tablespoon of butter
• truffle oil (optional)

Caper sauce:
• sour cream + thick yogurt
• 1 tablespoon of mayonnaise
• 1 teaspoon Dijon mustard
• 2 cloves of garlic
Capers in vinegar OLE!
• a few drops of lemon juice
• salt & pepper

Bake the bagels (rolls) in the oven to keep them warm. Place bacon slices in batches on a hot skillet. Cook on both sides. Take it off the heat. Put the butter on the skillet and break the eggs to make scrambled eggs (season with salt and pepper to taste).
Mix the cream with the remaining sauce ingredients.
Smear each half of the bagel with the caper sauce, arrange the rocket, cooked bacon and scrambled eggs. Pour with truffle oil.
Bagels (fully prepared) can be placed in the oven for a while to keep them gently warm.
