Bagels with prosciutto ham, pesto, and OLE! Dried tomatoes in Oil with Herbs


  • 2 bagels
  • a few thin slices of prosciutto ham
  • ½ mozzarella pack
  • jar of pesto (homemade or premium store-bought)
  • a few slices of OLE! Dried tomatoes in Oil with Herbs
  • your favourite lettuce (arugula alone will do)
  • 4 fresh quail eggs

Cut the grilled bagels in half and spread with a thick layer of pesto. Top with lettuce, ham and mozzarella slices, and dried tomatoes (which you can cut into smaller pieces). In the meantime, heat up a small pan and gently crack the eggs inside. Fry the eggs and add them to the bagels. Serve hot.
