Avocado, Scrambled Egg, and Sun-Dried Tomato Toasts
Ingredients:
– 2 slices of bread (or rolls)
– 1 egg
– butter
– 4 eggs
– 1 avocado
– 2 tablespoons mayonnaise
– salt, pepper
– Sun-dried tomatoes with cranberries and herbs in oil OLE!
Instructions:
Slice avocado. Beat 1 egg in a bowl, add a pinch of salt, and whisk (remaining eggs are for scrambled eggs). Dip bread/rolls in the egg. Melt butter in a pan and toast both sides of the bread. Transfer to a plate. Spread with mayonnaise. In the same pan, melt a tablespoon of butter, crack eggs, wait for whites to set (avoiding yolks). Mix yolks, add salt, pepper, and sun-dried tomatoes with cranberries. Place the scrambled eggs on the toasts. Serve warm.
