Autumn Bulgur Salad with Olives and Roasted Pepper

Ingredients:

  • 1 cup cooked bulgur
  • Green olives stuffed with pepper paste OLE!
  • 1 roasted pepper (from a jar or homemade)
  • Sun-dried tomatoes OLE! – choose your favourite variety
  • Pumpkin seeds
  • Sprouts
  • A handful of arugula

    Dressing: 2 tbsp olive oil, 1 tsp balsamic vinegar, salt, pepper

Instructions:

  1. Chop all the ingredients except the green olives stuffed with pepper paste and mix them with the bulgur.
  2. Add the whole green olives with pepper paste.
  3. Add the arugula and drizzle with the dressing just before serving.
