Autumn Bulgur Salad with Olives and Roasted Pepper
Ingredients:
- 1 cup cooked bulgur
- Green olives stuffed with pepper paste OLE!
- 1 roasted pepper (from a jar or homemade)
- Sun-dried tomatoes OLE! – choose your favourite variety
- Pumpkin seeds
- Sprouts
- A handful of arugula
Dressing: 2 tbsp olive oil, 1 tsp balsamic vinegar, salt, pepper
Instructions:
- Chop all the ingredients except the green olives stuffed with pepper paste and mix them with the bulgur.
- Add the whole green olives with pepper paste.
- Add the arugula and drizzle with the dressing just before serving.
