Spring salad with kohlrabi and OLE! dried tomatoes
Ingredients:
- 1 romaine lettuce head
- 1 big kohlrabi or 2 small ones
- handful of cocktail tomatoes
- 4 radishes
- OLE! Pastena dry tomato paste with olives or OLE! dried tomatoes in oil with pumpkin seeds
- 1/3 cup sunflower seeds
Sauce:
- ½ cup natural yoghurt
- 4 tablespoons olive oil
- 2 garlic cloves
- 1 teaspoon mayonnaise
- salt, pepper
- 1 tablespoon lemon juice
Mix the sauce ingredients in a food processor/blender and refrigerate. Clean the romaine lettuce and cut into smaller pieces. Drain. Dice the kohlrabi. Slice the radishes. Cut the tomatoes in halves. Roast the seeds in a dry pan.
Arrange the lettuce and other ingredients in deep platters, add sauce, and top with plenty of dried tomatoes (Pastena or whole).
