- 2 sweet potatoes
- feta or other Balkan cheese
- 2 tablespoons of OLE! Golden Onions in Vinegar
- 3 full tablespoons of pesto
- olive oil
- 1 tablespoon of your favourite herbs (e.g. thyme, basil, and oregano)
- salt, pepper
- other dips
Wash and peel the potatoes and dry them off on a paper towel. Cut into thick strips and place in a bowl. Add olive oil, pesto, salt, pepper, and herbs. Mix. Preheat the oven (thermal circulation) to 200oC. Spread baking paper on the baking tray and place the sweet potato pieces on top.
Put into the preheated oven for around 20-25 minutes until the potatoes turn crispy. Served with crumbled feta, onions, and sauces.
