Avocado with eggs, OLE! Pastena – Dry Tomato Paste with Correggio Cheese, and thyme


Split the avocado in half and remove the seed. If the hole from the seed is too small, gently make it bigger with a spoon to create an egg pocket.  Add a teaspoon of Pastena, the whole yolk, and not the whole white (carefully to keep it from spilling) in the middle of each half. Add salt and pepper, sprinkle with thyme and olive oil, and put into the oven preheated to 200C. Bake for 10-15 minutes, as long as it takes for the egg to set but remain in a semi-liquid state. Eat immediately while still hot.
