Minced meatballs with onion

Ingredients:
• 500 g minced meat from the shoulder
• 1 egg
• a handful of chopped parsley
• 1/2 shallot (very finely chopped)
golden pickled onion OLE! (chopped) – quantity as desired, about 1/3 jar
• 1/2 cup breadcrumbs + for sprinkling
Additions:
• potatoes
• beetroot

Mix all the ingredients for the cutlets together with wet hands so that they combine thoroughly. Coat in breadcrumbs and fry in hot oil until golden brown.
Serve with potatoes and beetroot.
