Savory French toast with sun-dried tomatoes and herb cottage cheese
Ingredients (serves 2):
● 4 slices of toasted bread (preferably whole grain or sourdough)
● 1 egg
● 4 tablespoons of milk
● 5 cherry tomatoes
● 100g cottage cheese
● 5-6 sun-dried tomatoes in oil with herbs OLE!
● 1 teaspoon chopped chives or parsley
● salt, pepper, tablespoon tomato oil for frying
Preparation:
1. Mix the cottage cheese with 2 tablespoons of milk, the chives, and season with salt and pepper – this creates a fragrant paste.
2. In a bowl, whisk the egg and milk together.
3. Dip each slice of bread in the egg on both sides.
4. Fry in a pan with tomato oil until golden brown on both sides. 5. Serve the finished toast with a portion of cottage cheese spread, add cherry tomatoes and chopped dried tomatoes, sprinkle with chives – for a delicious, warm breakfast.
