Salmon salad with capers in oil with herbs OLE!
Ingredients:
– 1 salmon fillet (approx. 200g)
– grape seed oil
Salmon marinade:
– 1 chopped garlic clove
– 1 tablespoon soy sauce
– lemon juice (approx. 2 tablespoons)
– freshly ground coarse pepper
Salad:
– romaine lettuce
– ½ red onion, thinly sliced
– capers in oil with herbs OLE!
– arugula
– pickling cucumbers
– dressing: olive oil, salt, pepper, herbes de Provence, 1 tablespoon lemon juice
Gently peel salmon from the skin, cut into cubes approx. 2x2cm. Place in the marinade for at least 1 hour. Fry in hot oil for about 1 minute on each side (turn delicately to ensure each side is fried). On plates, arrange lettuce, arugula, onion slices, peeled cucumbers cut into cubes, and capers. Top with salmon and drizzle with the dressing. Serve warm or cold.
