Roasted Pumpkin with Feta, Thyme, and Sundried Tomatoes with Cranberries with Herb in Oil OLE!
Ingredients:
• Pumpkin – preferably butternut (can be roasted with the skin)
• Thyme (1 tablespoon dried or fresh)
• Feta
• Arugula
• Sundried tomatoes with cranberries with herb in oil OLE!
• Olive oil
• 1 teaspoon honey
• Dried cranberries
• Salt, pepper, or dried chili flakes
Wash the pumpkin thoroughly and cut it into strips. Sprinkle with thyme, salt, pepper, or chili flakes. Drizzle with a mixture of olive oil and honey. Roast for about 15 minutes, until golden and soft. On a plate, arrange arugula, pumpkin, feta, cranberries, and sundried tomatoes with cranberries. Sprinkle with a bit more thyme before serving.
