Herrings on Apples with Pickled Cucumbers and Mushrooms
Ingredients:
– Approx. 150g herring fillets or maatjes fillets
– Milk (for soaking herring)
– Oil
– 3 pickled cucumbers
– 1 red onion
– 5-6 apples
– Oil
– Mushrooms marinated with carrots and onions OLE!
– Pepper
Rinse the fillets, place them in a bowl, and soak in milk, preferably overnight, to reduce saltiness and enhance tenderness.
Slice apples into thicker rounds, sprinkle with lemon juice. Peel and dice smaller pieces of fruit. Finely chop pickled cucumbers, onion, and pickled mushrooms with vegetables from the jar. Mix and add a tablespoon of oil.
Rinse herring after removing from the milk and cut into strips. Combine with the remaining ingredients. Add pepper and oil. Mix well. Refrigerate for a few hours. Place the herring mixture on apple slices.
