Greek-Style Fish with Dried Tomatoes

ingredients:
• about 400g fish (e.g., cod)
• 3 large carrots
• 2 small parsley roots
• 1 onion
• 1 tablespoon butter
• 80g tomato paste
• salt, pepper
• 1 bay leaf
• 2 allspice berries
• 1/2 jar of dried tomatoes marinated with oregano and chili OLE!
• parsley leaves for decoration

Wash the fish thoroughly, salt, and pepper it. Set aside.
Wash, peel, and grate the carrots and parsley roots. Chop the onion and fry it until golden in oil. Add the grated vegetables and butter. Fry and add 1/2 cup of water to let it simmer for a moment. When the water evaporates, add the tomato paste, salt, and pepper. The vegetables should be soft. Finally, add the dried tomatoes and fry everything together. Adjust the seasoning.
On a separate pan, fry the fish for a few minutes on each side.
On a serving platter, place the vegetables in the sauce and top with the fish.
Serve warm or cold.
