Fried tofu with rice and dried tomatoes

Ingredients:
• 2 cubes of tofu
• 2-3 tablespoons of potato flour
• 200 g basmati rice
Sun-dried tomatoes marinated with oregano OLE!
• sesame
• salt, pepper
• a handful of parsley or cilantro

Marinade:
• 4 tablespoons of soy sauce
• 1-2 tablespoons of brown sugar or sweet syrup (agave, maple or date)
• 5 tablespoons of water
• a piece of peeled and grated ginger (approx. 3-5 cm)
• 2 cloves of garlic
• 1 tablespoon of dried chilli flakes

Boil the rice in salted water. Cut the dried tomatoes into smaller pieces and combine with the rice in a bowl.
Combine the marinade ingredients. Set aside.
Cut the tofu into cubes and coat in potato flour. Heat the oil and fry in batches so that the pieces do not stick together and have a crispy coating. Turn them gently using plastic/silicone tongs or chopsticks.
Remove from the heat onto a separate plate and pour the marinade (without the fresh herbs) into a heated pan. Add the tofu, fry for a while and remove from the heat.
Place on a plate with the rice and fresh herbs. Sprinkle with sesame seeds.
