Breakfast toast with fried egg, ricotta and dried tomatoes with pumpkin seeds

Ingredients:
● 2 slices of bread (preferably sourdough or rye)
● 2 eggs
● 4 tablespoons of ricotta (or cream cheese)
● 4–6 dried tomatoes with pumpkin seeds in oil with herbs OLE!
● 1 teaspoon of oil from tomato marinade
● salt, pepper
● fresh chives or rocket for garnish

Preparation:
1. Toast the bread in a dry pan or toaster until crispy.
2. Fry the fried eggs in a pan with a little oil (preferably from tomato sauce) – the yolk can be runny or hardened, according to your preferences.
3. Spread ricotta on each toast, season with a pinch of salt and pepper.
4. Place the chopped dried tomatoes with pumpkin seeds on top, then the fried egg.
5. Drizzle lightly with tomato oil, sprinkle with fresh chives or rocket and serve immediately.
