Breakfast bowl with skyr, eggs, and sun-dried tomatoes in oil with herbs and sunflower seeds
Ingredients:
● 2 eggs (medium or hard-boiled)
● 3-4 radishes, sliced
● 1/3 cucumber, thinly sliced
● 3-4 tablespoons natural skyr
● 2-3 tablespoons sun-dried tomato strips in oil with herbs and sunflower OLE!
● 1 teaspoon tomato oil – for drizzling
● 1 slice sourdough bread or 1/2 pita/naan bread
● salt, freshly ground pepper
● (optional) herbs: dill, parsley, or chives
Preparation:
1. Boil the eggs (6-8 minutes until semi-hard), peel them, and cut them into halves or quarters.
2. On a plate or bowl, arrange:
○ a portion of skyr
○ sliced radishes and cucumber
○ eggs
○ sun-dried tomatoes with sunflower seeds
○ drizzle everything with a little tomato oil.
3. Sprinkle with freshly ground pepper, salt, and herbs.
If you like, drizzle with a little lemon juice for freshness.
4. Serve with bread, which you can lightly warm in a dry pan or toaster.
