Baked Sweet Potatoes with Guacamole and Crispy Golden Onions
Ingredients:
- Sweet potatoes
- Oil
- Avocado
- Red onion
- Garlic
- Cherry tomatoes
- Lemon

- Feta cheese
Instructions:
- Cut the sweet potatoes and place them on a baking tray lined with parchment paper.
- Drizzle the sweet potatoes lightly with oil and bake in a preheated oven at 200°C (390°F) for about 20–30 minutes, occasionally checking if they are soft enough.
- Meanwhile, prepare the guacamole by mashing the avocado and mixing it with finely chopped red onion, lemon juice, crushed garlic, and chopped cherry tomatoes.
- Top the baked sweet potatoes with the guacamole.
- Sprinkle crumbled feta on top and finish with OLE! pickled golden onions.
