Baked Sweet Potatoes with Guacamole and Crispy Golden Onions

  1. Cut the sweet potatoes and place them on a baking tray lined with parchment paper.
  2. Drizzle the sweet potatoes lightly with oil and bake in a preheated oven at 200°C (390°F) for about 20–30 minutes, occasionally checking if they are soft enough.
  3. Meanwhile, prepare the guacamole by mashing the avocado and mixing it with finely chopped red onion, lemon juice, crushed garlic, and chopped cherry tomatoes.
  4. Top the baked sweet potatoes with the guacamole.
  5. Sprinkle crumbled feta on top and finish with OLE! pickled golden onions.
