Dutch Baby with Caramelized Pear, Cheese, and Golden Onions

Servings: 1 large portion

Batter:

  • 3 eggs
  • 120 ml (½ cup) whole milk
  • 70 g (½ cup) all-purpose flour
  • 1 tbsp butter
  • A pinch of salt

Toppings:

  • 1 large pear, thinly sliced
  • 100 g golden onions in vinegar OLE!
  • 50 g blue cheese (such as Gorgonzola) or goat cheese
  • 1 tbsp ricotta
  • 1 tsp honey or maple syrup
  • A few walnuts or pecans
  • Dried rosemary

Instructions:
1.Preheat the oven to 220°C (425°F), top and bottom heat.
Place a cast-iron skillet or ovenproof dish inside to heat up thoroughly.
2. In a blender or bowl, mix the batter ingredients (eggs, milk, flour, salt) until smooth and slightly runny.
3.Once the skillet is very hot, carefully remove it from the oven, grease it with a bit of butter, and quickly pour in the batter.
4.Bake for 20–22 minutes, until the Dutch baby puffs up and turns golden brown.
5.Meanwhile, prepare the toppings:
In a small pan, sauté the pear slices in butter until lightly caramelized.
Toward the end, drizzle with honey and sprinkle with rosemary.
6.When the Dutch baby is ready, remove it from the oven and immediately top with:

  • caramelized pear slices,
  • golden pickled onions,
  • crumbled cheese,
  • and chopped nuts.

7.Serve right away, while still warm and fluffy.
