Summer zucchini pancakes with garlic and yogurt

Ingredients (2 servings):
● 1 medium zucchini (approx. 250-300 g) – grated
● 1 egg
● 2 tablespoons all-purpose or oat flour
● 2 tablespoons garlic with herbs in oil OLE!
● salt and pepper
● plain yogurt with dill and mint (for serving)

Preparation:
1. Season the grated zucchini with salt, let it sit for 10 minutes, then squeeze out the excess water.
2. Mix with the egg, flour, chopped OLE! garlic, and pepper.
3. Fry in a pan in a little garlic oil for 2-3 minutes on each side.
4. Serve with yogurt mixed with dill – perfect for a summer lunch or a savory breakfast.
