Mozzarella in panko with sun-dried tomatoes

Ingredients:
– 1 pack of mozzarella
– 1 egg
– panko breadcrumbs
– oil
– 6 dried tomatoes with cranberries in oil with herbs OLE!
– 2 cloves of garlic
– olive oil
– ½ can of tomatoes
– 1 onion
– 1 tablespoon of Provencal herbs
– salt, pepper
– a handful of basil leaves
– flour

Fry chopped garlic cloves in oil, add chopped onion. Fry until ingredients are soft and golden. Add tomatoes and wait until sauce evaporates and thickens. Add chopped dried tomatoes. Season to taste and set aside.
Drain mozzarella, remove excess liquid with kitchen towel. Coat in flour, beaten egg and panko breadcrumbs. Deep fry until breadcrumbs are golden brown.
Drain on paper towel and serve on tomato sauce
