Potato Salad with Bacon
ingredients:
• 500g potatoes (with skin)
• 5 medium-sized pickled cucumbers
• 1 onion
• 150g bacon
• Marinated mushrooms with carrots and onions OLE!
• 100g 18% cream
• 1 garlic clove
• 1 tablespoon Dijon or French mustard
• chopped parsley
• salt, pepper
Wash the potatoes thoroughly and cook for about 20 minutes, so they are cooked but not too soft. Let them cool. Chop the cucumbers and onion. Cut the bacon and fry it.
Mix the cream with mustard, salt, and pepper. Add crushed garlic.
Peel the potatoes and chop them into cubes. Combine them with the cucumbers, chopped onion, pickled mushrooms, and bacon. Add the sauce and mix. Let it sit for a few hours to let the flavors meld.
