Herring Tartare with Dried Tomatoes
ingredients:
• 4 herring fillets
• 2 tablespoons French mustard
• 1 onion
• 3 pickled cucumbers
• 1/3 jar of dried tomatoes in strips with herbs in oil OLE!
• 3 tablespoons finely chopped fresh parsley (add a few leaves for decoration)
• black pepper
• 1 tablespoon oil
Rinse the herring fillets from the brine several times and soak in cold water for a few hours. After this, rinse again to remove excess salt.
If using herring fillets in oil, rinse them thoroughly under running water.
Chop the prepared fillets with a sharp knife.
Peel the pickled cucumbers and chop them into small cubes.
Finely chop the onion.
Add parsley, oil, mustard, and pepper to the herring.
If you want to serve the tartare in layers, you’ll need a metal ring. Arrange the herring, onion, cucumber, and dried tomatoes in the ring. Decorate with a little mustard and parsley leaves.
